bonding over baking

I've introduced my friend Lora before but not only is she a talented designer maker but also a very talented baker! I don't tend to follow recipes for savoury dishes and I'm up for putting my own twist on a dessert but Lora is always inventing new cakes. I see baking cakes as a bit of a science and not something for little old me to tamper with but Lora just wings it and ends up producing the yummiest cake creations. We decided to have an afternoon of baking to try out one of her ideas and so of course I obliged as baking sidekick and taste tester.
The result was soooo delicious. The mixture of sweet and salty worked so well (one of my favourite flavour combinations) and the dark brown sugar gave the sweetness depth. The real star of the show was the honey Lora brought back from Greece. I realised then, that I'd never truly tasted honey before that moment. It was so floral and fresh and you could taste it all the way through the cake where we'd pierced the top. So my advice is invest in some good honey. Next time she goes I will certainly be requesting a jar or two.
Her tip was to really whip the cake mixture for quite a while, almost as if you were making meringue. This gives it lots of air and helps it rise well. You can't over whip it so go crazy! To try this tempting recipe follow this link to Lora's baking blog, All Day I Dream About Cake.

a classic...not so classic

You may remember me doing a guest post for the very lovely Lauren over at Aspiring Kennedy blog a little while ago. From now on I'll be guest posting a recipe every month. Today's recipe was a revelation for me. I'd never liked this boring old sponge until I tried this version at a friend's tea party. Check out her scrumptious baking blog here and for full details of how to make this sweet treat, make a trip in this direction.

so that was march...

From top right...
*I spent a lot of time going back to my surface pattern roots and ink & felt tips were my materials of choice.
*A wet but fun day trip to Hackney City Farm; a surreal experience I'd recommend.
*My Mum in Law always buys me the most lovely flowers.
*Nick's Birthday made it very necessary to make a monster cake.
*This cute little chicken hut made me chuckle, although I think it promised more than it delivered
*RIP my favourite brown boots. After only 9 sweet months together I well and truly broke them. On the up side it meant I got these very yummy replacements.
*It was a happy moment when I realised my nail polish collection made a rainbow.
*My favourite building on my way down to Shepherd's Bush green. I love, love, love the retro typography!

happy but naughty

This is a pretty random post for Good Friday but it was ready to go and who knows, you might be looking to bake some treats with the extra time you have over the long weekend. It was Nick's Birthday on Monday and therefore time to bake something a little bit extravagant. This peanut butter & salted caramel mountain is pretty much a heart attack in a cake but I'm not sure Birthdays are about doing anything by halves! If you want to give it ago then find the recipe here. Luckily our church family very helpful demolished the left overs. This is not a cake for 2 people!

brown butter pumpkin cake

Ok so I love pumpkin! Pumpkin soup, pumpkin pie, roast pumpkin, pumpkin ravioli, pumpkin bread...I could go on. Sometimes I think I should have been born in America. Anyway I'm always finding yummy recipes that incorporate this delicious ingredient but in Britain you can't just walk into any old supermarket and pick up a can of pumpkin puree. The not so appealing alternative would be waiting until pumpkins are in season and then hacking into to the monster in order to cook it (for a LONG time) and mash it all up. This is far too time consuming not to mention hard work for someone with weedy arms like myself. You can imagine my sheer delight when I realised there was a Waitrose down the road from our new flat, selling the pumpkin puree I've been after. I found this recipe that combines pumpkin with another one of my favourite sweet ingredients, pecans.

The pumpkin acts a bit like carrot in a carrot cake, keeping the whole cake really moist. The candied pecans topped it off really nicely! A wintery treat!

For the cake: grease two 6 x 3 inch cake pans and heat oven to 180 degrees
  • 3/4 cup unsalted butter
  • 2 cups unbleached all-purpose flour
  • 1-1/2 tsp. baking soda
  • 1-1/2 tsp. ground cinnamon
  • 1 tsp. ground ginger
  • 3/4 tsp. kosher salt
  • 1 1/2 cups pumpkin puree
  • 1-1/2 cups granulated sugar
  • 2/3 cup firmly packed light brown sugar
  • 2 large eggs, room temperature
  • 1/3 cup buttermilk. room temperature
    1) Melt butter in a saucepan, stirring until it turns a golden colour. Leave to cool.
    2) In a bowl whisk flour, baking soda, cinnamon, ginger and salt.
    3) In another bowl whisk the pumpkin puree with the granulated sugar, brown sugar, eggs and buttermilk until blended.
    4) Stir in the dry flour mixture until just combined and then gently whisk in the brown butter until fully incorporated.
    5) Divide the batter between the two prepared pans.
For the brown sugar cream cheese:

  • 2 cups dark brown sugar, finely packed
  • 1 cup unsalted butter at room temp
  • 500 grams cream cheese
  • 2 cups pecan halves
  • 1/4 cup heavy whipping cream
  • 1 cup dark brown sugar

1) Beat butter and brown sugar together until smooth
2) Add cream cheese (cold) and beat until just blended

For the candied pecans: keep oven at 180 degrees
1) Mix together pecans, brown sugar and cream and spread over a greased baking tray
2) Cook for 15 minutes, stirring once.

Assemble cake: Let cake layers cool fully. Cut rounded tops off to create an even surface. Spread a tick layer of frosting in between the two layers to sandwich them together. Then cover the outside with icing and scatter the candied pecans on top.
